The plump, flexible pods are easy to split, allowing the seeds to be scraped directly into cakes, custards, buttercream, ice cream and desserts. The pods can also be infused whole in creams, syrups and sauces, creating an authentic vanilla flavour with distinctive seed flecks.
After removing the seeds, place the empty pods in a sealed container of sugar to make homemade vanilla sugar.
